As adapted very closely from the New York Times recipe
Ingredients:
- 1/2 cup unsweetened cocoa powder (I use Scharffenberger, because it’s delicious)
- 1/2 cup butter (or 1 stick)
- 2 eggs (large)
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1 cup chopped walnuts or pecans (I haven’t tried it, but macadamia seems like it could be good here, too!)
- 1 tsp vanilla
- a pinch of salt
To Make:
- preheat oven to 325 degrees
- Melt butter and cocoa powder in saucepan over medium heat, stirring occasionally so chocolate doesn’t burn
- Once fully melted, take off heat for a few minutes to cool
- Transfer to a large mixing bowl (or stand mixer) and add in both eggs and the vanilla
- In a separate, medium-sized bowl, combine all dry ingredients (sugar, flour, nuts, salt)
- Add dry ingredients to wet and mix until just combined
- Pour into greased, 8×8 pan, and bake for 30-35 minutes (my oven always takes longer, so I tend to lean towards the 35 minute mark, but it all depends on your oven!)
- Sit back, relax, and try not to eat all of them before your company arrives! (Think “what would Katharine do?” I’m sure she’d be an absolute lady about it!
